Stevia extract is extracted from Stevia, a plant belonging to the Asteraceae family from South America. It is a natural sweetener approved as a food additive worldwide and is utilized in numerous food items. Stevia extract contains steviol glycosides (compounds with a steviol backbone to which glucose is bound, among other compounds), such as Stevioside, Dulcoside A, and Rebaudioside A, B, C, D, F, as well as steviol. Moreover, stevioside is known to be approximately 300 times sweeter than sucrose.
Stevia extract is listed as "Stevia Extract" and "Steviol Glycosides" in the Japanese Official Formulary of Food Additives, and as "Steviol Glycosides" in JECFA Monographs. In addition, steviol glycosides can be well separated by Wakopak Wakosil-II 5C18HG.
