| Outline | It is a main protein of corn, accounting for 5 % of the proteins. In modified, high-protein corn, it is zein that actually has been increased. It is one of a series of prolamins, a water-insoluble but ethanol-soluble (50 to 90 %) protein, and thus does not refer to a single molecular species. It is a proline- and glutamate-rich protein, but lacks tryptophan and lysine in essential amino acids. The product has solved problems such as color and odor that conventional products used to have. It can be extensively used as a coating agent or a food additive, utilizing functional properties of zein including film forming, gelation and antioxidation properties. Plant protein that belongs to prolamin. It is heterogeneous. |
