Found widely throughout the body, chondroitin sulfate is a mucopolysaccharides that is a part of a carbohydrate chain of proteoglycan (i.e., core protein plus carbohydrate chain). Chondroitin consists of two alternating monosaccharides: D-glucuronic acid (GlcA) and N-acetylgalactosamine (GaINAc). Various fractions result from sulfation of C2 of GlcA and C4 and C6 of GaINAc. Particularly abundant in the cartilage of squids, chondroitin sulfate E has structure in which the 4 and 6 positions of the glutamate-acetyl-galactosamine are sulfated. It has been reported that chondroitin sulfate reinforces bone and cartilage, exerts anti-inflammatory properties, promotes androgen secretion, increases insulin release and upregulates neuronal growth.
