Overview / Applications
| Outline | Catalase is an enzyme of 220000 to 260000 in molecular weight and consists of 4 subunits; it degrades hydrogen peroxide to water and oxygen. It is added to boiled fish pastes such as kamaboko, chikuwa and hanpen for the purpose of sterilization and bleaching given in the "Standard Methods of Analysis for Food Sanitation" and is used in the measurement of residual "hydrogen peroxide" concentration. It is also used as a standard protein in the measurement of molecular weight, for elimination of active oxygen together with SOD in the research fields of superoxides, and as a marker enzyme for peroxisome. |
