| Outline | Pepsin is an acid protease present in mammalian gastric juice and secreted into the gastric juice as the result of limited proteolysis of the precursor pepsinogen. It has a wide range of substrate specificity for peptide bond and decomposes hydrophobic amino acids such as phenylalanine, leucine, tyrosine and methionine considerably. [Activity] 1 : 60,000 indicates the following activity: 1 g of pepsin digests 60,000 g of ovoprotein under the conditions of HCl buffer at 50 degrees C for 2 hours. |
